Here is what you require us to inform you about the raw material, catching/handling, processing and packing.
Raw Material Sourcing:
- Mostly coming from around
- Travel time from supplier to our factory is 15 minutes to 3 hours.
- Catch by hand line
- Daily catch, only 3-4 hours to fishing grounds.
- Most of the fish comes from one day catching boats.
Catching and Handling:
- Remove the fish from hook as soon as possible
- Eliminate struggling by clubbing the fish properly
- Kill the fish with a spike inserted in the brain
- Bleed the fish immediately after killing
- Gut and gill
- Wash the fish after bleeding
- Start chilling as soon as possible to get the temperature at 0°C.
Processing and packaging:
- Clean and brush the whole fish with fresh water that already contains chlorine
- Cutting and dressing, cut the fish into 4 pieces
- Loining and trimming, remove the bones, black meat and skin.
- Chilling, put the loin inside the plastic and chill it with crush ice for about 5 – 10 hours. After that, remove the plastic from the loin and cover it with special tissue and put the loin again into the new plastic, vacuumed and it is ready to be shipped.
- Packing, 25-33 kg per box (AG75), Jelly Ice or dry Ice (depends on the order).
